Ingredients

  • 2 C broth
  • 2 C water
  • 3-4 spoonfuls tarhana
  • 1 C onion, chopped
  • olive oil
  • dried oregano
  • cayenne pepper
  • 2 spoonfuls hot red pepper paste
  • 1 1/2 C tomato sauce
  • 1-2 fresh tomatoes, or can
  • basil
  • mint
  • black pepper
  • salt
  • bay leaf
  • cumin, pinch
  • pasta, optional
  • meatballs, optional

Instructions

  1. Combine broth and water, bring to almost boil. Add tarhana, mix well for five minutes while water keeps heating.
  2. Meanwhile, fry onion in olive oil. Add oregano and cayenne pepper while frying.
  3. Add hot red pepper paste, tomato sauce and chopped tomatoes.
  4. Add spices, bring to a boil, stir to combine for five minutes.
  5. Add pasta (al dente time) or meatballs (10 minutes) if desired.
