Ingredients

  • 2 tsp chili powder
  • 1 tsp paprika
  • 1 tsp ground cumin
  • 2 tsp garlic powder
  • 1/2 tsp salt
  • 1/8 tsp pepper
  • 1/4 tsp cayenne pepper
  • 1/3 C honey
  • 1 tbsp apple cider vinegar
  • 1 tbsp coconut oil
  • 2 costco packs chicken thighs, boneless, skinless
  • green onions, for serving

Instructions

  1. Preheat oven to 375F. Melt coconut oil in a cast iron skillet over medium high heat. Combine the spice rub ingredients and mix until thoroughly combined. Rub the chicken with the prepared spice rub and toss to coat.
  2. Add chicken to skillet and cook for 5 minutes on each side, or until browned. Prepare the honey sauce by combining honey and apple cider vinegar in a mixing bowl; stir until well incorporated.
  3. Remove chicken from heat and pour honey sauce over the chicken thighs, turning to coat.
  4. Bake in oven for 25 to 30 minutes, or until chicken is cooked through. Remove from oven and let stand couple minutes. Plate and garnish with green onions.
