Ingredients

  • 10 oz whole wheat spaghetti
  • 2-3 heads broccoli, florets
  • 1 tbsp olive oil
  • 2 cloves garlic, crushed
  • 2 red chiles, (serranos work), seeded and finely chopped
  • 4 green onions, thinly sliced
  • 1 zest of lemon
  • salt and pepper, to taste

Instructions

  1. Cook the pasta in boiling water according to the package directions. Drain.

  2. Meanwhile, put the broccoli in a steamer and steam over high heat for 3 minutes or until just tender. Set aside.

  3. Heat a skillet over medium heat and add the olive oil. Gently fry the garlic, chilies, green onions, and lemon zest 2-3 minutes until the green onions are soft. Add the broccoli and heat through. Tip the broccoli mixture into the pasta with the feta cheese and lemon juice and toss well. Season with black pepper, then serve.
