Ingredients

one big costco pack brussel sprouts, trimmed and halved

4 carrots, peeled and sliced in 1/2" pieces

2 or 3 turnips, peeled and sliced in 1/2" pieces

4 tbsp olive oil

2 tbsp balsamic vinegar

2 tsp rosemary leaves, chopped

2 tsp thyme leaves, chopped

kosher salt, to taste

black pepper, to taste

1 C pecans, toasted

1 C cranberries, dried
Instructions
- Preheat oven to 400°. Scatter vegetables on a large baking sheet. Toss with oil, balsamic vinegar, rosemary, and thyme. Season with salt and pepper.
- Bake for 20 to 25 minutes, until the vegetable are tender, shaking the pan halfway through.
- Before serving, toss roasted vegetables with pecans and cranberries.
