Ingredients

  • one big costco pack brussel sprouts, trimmed and halved
  • 4 carrots, peeled and sliced in 1/2" pieces
  • 2 or 3 turnips, peeled and sliced in 1/2" pieces
  • 4 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 2 tsp rosemary leaves, chopped
  • 2 tsp thyme leaves, chopped
  • kosher salt, to taste
  • black pepper, to taste
  • 1 C pecans, toasted
  • 1 C cranberries, dried

Instructions

  1. Preheat oven to 400°. Scatter vegetables on a large baking sheet. Toss with oil, balsamic vinegar, rosemary, and thyme. Season with salt and pepper.
  2. Bake for 20 to 25 minutes, until the vegetable are tender, shaking the pan halfway through.
  3. Before serving, toss roasted vegetables with pecans and cranberries.
