Ingredients
- 3 bunches soba noodles
- 1 C broccoli
- 1 C snow peas
- 2 carrots, shredded
- 2 cloves garlic
- 1 1-inch piece fresh ginger
- 1/2 C peanut butter
- 1/4 C plus 1 tbsp soy sauce
- 3 tbsp sesame oil
- 2 tbsp rice vinegar
- 1 tbsp honey
- 2 tsp chili garlic sauce
- 1 costco pack chicken breast, cooked
Instructions

Cook the chicken. Prepare the noodles according to the package directions for al dente. About 2 minutes before the pasta is ready add the broccoli, carrots, and snow peas. Reserve ¼ C of pasta water before draining.

Meanwhile, in a food processor with the motor running, add the garlic and ginger. Scrape down the sides and add the peanut butter, soy sauce, sesame oil, vinegar, honey and chili garlic sauce and process until smooth.

In a bowl, combine the sauce and pasta mixture and stir to combine (if too dry, add a T or so of reserved cooking liquid). Add the cooked chicken and stir to combine.
