1 small shallot, diced

1 inch ginger, diced

1/2 tbsp sesame oil

1 1/2 tbsp red curry paste

1 tbsp liquid aminos

whole jar kimchi

1 C mung bean sprouts

1 C vegetable broth

1 pack tofu, extra firim

4 small heads broccoli

1 can coconut milk

2 tbsp lime juice

salt and pepper, to taste

4 Costco packs ramen

1 spoon garlic chili paste
Instructions
- In a pan on low-medium heat, add your shallots and ginger with sesame oil. Cook for 5-7 mins or until caramelized.
- Add kimchi, sprouts, red curry paste, and liquid aminos. Cook for another 5-10 mins.
- Add coconut milk and veggie broth - cook until boil.
- Add in tofu, broccoli, cook until broccoli is tender.
- Add lime juice and salt and pepper to taste. Lower temperature and let simmer for 5 mins.
- Add your cooked noodles to broth.
