Ingredients

  • 6 eggs
  • 1 C cottage cheese
  • 2 tsp taco seasoning
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 bell pepper, minced
  • 1 jalapeno, minced
  • 1/4 C red onion, minced
  • a few dashes hot sauce
  • 1/2 C black beans

Instructions

  1. Preheat oven to 325 degrees.
  2. Place eggs, cottage cheese, taco seasoning, hot sauce and salt and pepper into a food processor. Use the pulse feature to blend the custard egg mixture. Don’t over mix. Mix just until bubbles start to appear.
  3. Cut peppers and onion.
  4. Place the muffin tin on a sheet pan. Fill each muffin ⅔ of the way full with the egg custard batter. Sprinkle the peppers, onion and beans evenly on top of the egg bite cups.
  5. Place the muffin pan on a sheet pan. Bake the Cottage Cheese Egg Bites in a 325 degree oven for 30 – 35 minutes, or until custard is set. Let sit for about 15 minutes before removing the egg cups from the muffin pan.
