Ingredients

  • 1 1/2 C all-purpose flour
  • 2 tbsp brown sugar, packed
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1 C milk
  • 1 large egg
  • 2 tbsp applesauce
  • 1/2 tsp vanilla extract
  • 2 very ripe bananas, mashed (about 1 C)
  • 1/2 C mini chocolate chips

Instructions

  1. Whisk flour, brown sugar, baking powder, salt, and cinnamon in a large bowl.
  2. Whisk milk, egg, oil, and vanilla in a large measuring cup. Add wet ingredients to dry, add bananas, and stir until combined. Stir in chocolate chips.
  3. Spray pan or griddle with cooking spray. Turn to 3.0 Drop desired amount of pancake batter onto preheated griddle or pan. Cook until small bubbles form then flip until the bottom is a light golden brown.
  4. Serve plain or with maple syrup.
